Characteristics of gelatine

Which main characteristics should be considered as important for defining the right gelatine for you ?

  • Jelly strength : this is the Bloom. Our gelatine ranges from 140 to 300 Bloom.
  • Viscosity : This is the measure of gelatine's resistance to flow.
  • Water content : residual value after drying, 12% max.
  • pH and isoelectric point (pI)
  • Particle size : from 6 mesh grain to 60 mesh powder.

Many other criteria can be taken into account in order to define the gelatine which corresponds to your needs : colour, clarity, ash, foam etc …
